In this study the NeoSpectra Spectrometer was used in the predictions of individual and total sugars in breakfast cereals from both ground and intact breakfast cereal samples.
It was demonstrated that NeoSpectra can be used as an in line assessment tool in the snack food industry to monitor the sugar content during production to verify that the product meets nutritional requirements.
Finally, using NeoSpectra, it was observed that the total sugar contents for eight out of 60 13 %) commercial breakfast cereals on the market were not in compliance with the declared values.
